Chipotle Lime Cream Sauce Recipe

If you're looking for a creamy, smoky, and slightly spicy sauce that levels up everything from fish tacos to burritos, you'll love this homemade Chipotle Lime Cream sauce. I originally made it for some shrimp tacos a while back, but we liked it so much I brought it back for a Tex-Mex-style smashburger, which we really enjoyed. This sauce brings together the smoky heat of chipotle peppers in adobo with the brightness of fresh lime, all smoothed out with a creamy base of sour cream and Greek yogurt. What makes it even better? It comes together fast in a food processor or with an immersion blender, and it keeps well in the fridge. Whether you're making it for taco night, meal prep, or just tired of the same old store-bought dressing, this chipotle lime sauce recipe is made with simple ingredients you can grab at any grocery store and will soon become a house favorite.

Ingredient Highlights

  • Chipotle peppers in adobo sauce: These smoked jalapeño peppers bring deep, earthy heat and smoky flavor to the sauce. You can adjust the spice level to your preference -- Use one for mild heat or two for more heat. If you don't have a blender on hand, skip the peppers and use just the adobo sauce -- it still works great!
  • Fresh lime juice and zest: Add vibrant acidity and citrus oils that brighten the sauce and cut through the richness. This is our acid that brings out the best in the other ingredients. I like to add lime zest for additional health benefits and the best flavor -- plus I want to use as much of the lime as possible. You can skip this step if you prefer. 
  • Sour cream: Adds a creamy texture and tangy flavor to balance the heat of the peppers. I like to use a Mexican crema occasionally in place of adding a little more acidity to the sauce. If you are looking for a slightly healthier option, a great way to do that is to use plain Greek yogurt instead. 
  • Mayonnaise: Similar to sour cream, but it adds more fat to balance out the heat.
  • Salt: Essential for seasoning and bringing all the flavors together.

Step-by-Step Instructions

Step 1: Prep the Ingredients

Gather all of your basic ingredients, including chipotle chilis in adobo sauce, fresh limes, sour cream, mayonnaise, and salt. 

Step 2: Blend Until Smooth

In a small bowl, combine the chipotle peppers, adobo sauce, fresh lime juice and zest, sour cream, and a pinch of salt. Then, use a food processor or immersion blender to blend until completely smooth and adjust seasoning as needed. Note: If you want to thin out the sauce, stir in a little water until the desired consistency is reached.

Step 3: Chill and Store

Transfer the crema to an airtight container, such as a mason jar, and refrigerate for at least 30 minutes. This resting time allows the flavor of the sauce to meld and intensify.

Substitutions & Variations

  • Want more sweetness? Add a touch more maple syrup or try honey.
  • Like the taste of cilantro? For a herby, fresh twist, mix in chopped fresh cilantro.
  • Use chipotle powder: In a pinch, substitute 1 teaspoon chipotle powder and a splash of soy sauce for the chipotle peppers and adobo sauce.
  • Add avocado: This will give the sauce some extra creaminess.

Serving Suggestions

This creamy chipotle lime sauce recipe goes well as:

  • A dipping sauce for sweet potato wedges, onion rings, or tater tots
  • A topping for shrimp tacos, fish tacos, or chicken tenders
  • A tangy salad dressing or bowl sauce for burrito bowls and pasta salad
  • A spread for sandwiches, wraps, or burgers

Storage Tips

You can store the chipotle lime crema in an airtight container—such as a mason jar or a reusable squeeze bottle—in the refrigerator for up to 5 to 7 days. The flavors continue to develop over time, so it's even better a day or two after making it. Before serving, be sure to give it a good stir or shake, as some natural separation may occur.

I will say that freezing is not recommended, as the dairy base tends to break down and become grainy once thawed, which can affect the texture and consistency of the sauce.

Ingredients
  

  • ½ cup sour cream
  • 3 tablespoon mayo
  • 1-2 adobos + 1 T adobo sauce
  • 1 lime zested & juiced
  • Pinch of salt

Instructions
 

  • In a small bowl, mix all crema ingredients until smooth. Taste and adjust lime or salt as needed.
  • If using adobo peppers, blend the mixture using a food processor or immersion blender.
  • Store the sauce in an airtight container and refrigerate until ready to use.

Notes

  • No Blender? Finely mince the chipotle pepper and whisk everything by hand—it won’t be as smooth, but it’ll still taste great.
  • Greek Yogurt Substitute: You can replace the sour cream with an equal amount of whole milk plain Greek yogurt for a tangier, lighter version.
  • Storage Tip: Store in an airtight container in the fridge for up to 5–7 days. Stir before each use. Freezing is not recommended.
